Santiago's Ceviche Mixto Recipe 

Ingredients: 

2 Pounds Fresh Sea Bass

1/2 Pound Shrimp

1/2 Pound Calamari

1 Red Onion

6 Limes and 6 Lemons

1 Bunch of Fresh Cilantro

1 Teaspoon Sea Salt

1/2 Teaspoon Black Pepper

1 Dash of Powdered Ginger

1 Red Pepper

1 Teaspoon Aji Paste

Directions:

Cut the fish into half inch pieces and insert into a large glass bowl.  Add salt, ginger powder and pepper over the fish along with the aji paste.  Squeeze the lemon and lime juice over the fish and add the shrimp and calamari.  Chop the cilantro into fine pieces along with the red pepper.  Chop half of the red onion finely and the other half slice it into fine threads.  Mix all ingredients with your hands, cover and let sit for two hours.  Put into the fridge for 10 minutes and serve! Buen Provecho!
